Oven-Roasted Tomato Cavatappi with Grilled Flank Steak

Ingredients

  • 1/2 cup oven-roasted tomatoes
  • 1 garlic clove
  • 1/4 cup flat leaf parsley, chopped
  • 2 tablespoons basil leaves, chopped
  • 2 teaspoons red wine vinegar
  • 1/4 cup olive oil
  • 4 ounces cavatappi pasta
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 pound flank steak, grilled
  • Parmesan cheese, for garnish
  • Small side salad, optional

Preparation

Step 1

In a food processor or blender, pulse the tomatoes and garlic. Add the herbs, vinegar, and olive oil. Pulse till combined. Toss the cooked pasta with 3/4 of the sauce and set aside.

Season the steak with salt and pepper. Grill to medium, about 4 minutes a side. Transfer to cutting board and let rest 5 minutes, then slice and toss with remaining sauce. Add to pasta, garnish with Parmesan cheese.

Serve with small side salad, if desired.
