Chocolate Strawberry Cake

This is one of my favorite cakes to make. The original recipe recommended the use of store bought frosting, but I prefer the homemade stuff!

Ingredients

  • 1 box white cake mix
  • 1 box (4 serving size) strawberry-flavored gelatin
  • 1 1/4 cups of water
  • 1/3 cup vegetable oil
  • 3 eggs
  • 1 cup seedless strawberry jam

Preparation

Step 1

Heat oven to 350 degrees (or 325 degrees if using dark or nonstick pans).Grease bottoms and sides of two 9-inch round cake pans with shortening (do not use cooking spray); lightly flour.

In large bowl, stir together cake mix (dry) and gelatin (dry). Add water, oil and eggs. Beat with electric mixer on low speed30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Divide batter between pans.

Bake 23 to 28 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire rack. Cool completely, about 1 hour.

Split each cake horizontally into 2 layers. On serving plate, place top of 1 layer, cut side up; spread with 1/3 cup of jam. Add bottom half of layer, cut side down; spread with 1/3 cup jam. Add top of scond layer, cut side up; spread with remaining 1/3 cup jam. Add bottom of remaining layer. Frost sides and top of cake with chocolate frosting.
