Ingredients

  • 2 c flour
  • 3/4 t bs
  • 1/2 t salt
  • 1 c sugar
  • 1/4 c butter, softened
  • 2 lg eggs (1/2 c egg substitute)
  • 1 1/2 cups mashed ripe banana (about 3 bananas)
  • 1/3 c plain low-fat yogurt
  • 1 t vanilla extract (no vanilla extract)
  • 1/2 c semisweet chocolate chips

Preparation

Step 1

Oven 350F.

Combine flour, bs and salt, stirring with a whisk.

Place sugar and butter in a lg bowl and beat with a mixer on med speed until well-blended. Add the eggs (egg substitute), 1 at a time, beating well after each addition. Add banana, yogurt, and vanilla (add banana and yogurt), beat until blended.

Add flour mixture, beat at low speed just until moist. Spoon batter into loaf pan coated with cooking spray. (Melt chocolate chips in microwave. Cool slightly. Add 1 cup batter to chocolate, stirring until well combined. Spoon chocolate batter alternately with plain batter into loaf pan. Swirl batters together using a knife).

Bake for 1 hr (1 hr 15 mins).
