Ingredients
- 1/2 pound new potatoes, scrubbed
- 4 tablespoons soft dark brown sugar
- 1/2 cup butter
- 1 tablespoon orange juice
- 1 tablespoon chopped fresh parsley
- salt and pepper
- orange rind curls to garnish

Preparation
Step 1
Cook the potatoes in a saucepan of boiling water for 10 minutes or until almost tender. Drain thoroughly.
Melt the sugar in a large heavy-based frying pan over low heat, stirring.
Add the butter and orange juice to the pan, stirring the mixture as the butter melts.
Add the potatoes to the orange and butter mixture and continue to cook, turning the potatoes frequently until they are completely coated in the caramel.
Sprinkle the chopped parsley over the potatoes and season with salt and pepper.
Transfer to serving dish and garnish with orange curls.
