Asparagus with Citrus Sauce

Ingredients
- SAUCE:
- 42 asparagus
- 2 cups salted water
- 2 cups ice water
- 3 tablespoons fresh orange juice
- 3/4 teaspoon orange zest
- 2 tablespoons fresh lime juice
- 3/4 teaspoon lime zest
- 2/3 cup extra virgin olive oil
- 1/2 cup heavy cream
- salt, to taste
- tabasco sauce, to taste
- 3 green onion, whole, minced, optional

Preparation
Step 1
Break off the butt end and peel the top 3/4 of the asparagus. Bring salted water to a boil. Immerse asparagus and cook 3 minutes. Remove from water, drain and cool in ice water. Set aside.
Mix ingredients for sauce. Just before serving bring sauce to a boil for 30 seconds while stirring.
Before serving, warm asparagus 1 minute in a saucepan with a small amount of oil and salt. Place in a heated serving dish and drizzle with warm sauce. Top with minced onion, if desired.
