Pork Chops with Nectarine Salsa

Ingredients
- Salsa:
- 2 nectarines, diced
- 1 ripe tomato
- 1/4 cup diced onion
- salt to taste
- 2 tbsp cilantro
- 2 tbsp lime juice
- 1/4 tsp red pepper flakes
- Pork Chops:
- 1 tsp ground cumin
- 1 tsp chili powder
- salt and pepper to taste
- 2 tbsp olive oil
- 4 boneless pork chops

Preparation
Step 1
1. Make salsa - place nectarines, tomato, onion, cilantro, lime juice and red pepper flakes in a bowl; toss to blend. Season to taste with salt. Cover and refrigerate 30 minutes.
2. Stir cumin, chili powder, salt & pepper in a small bowl. Place olive oil in bowl and brush over chops. Season both sides evenly with cumin mixture.
3. Cook pork chops on grill. Cook until lightly browned. Serve with salsa.
