Ingredients
- Icing:
- 3 cups grated carrots
- 2 cups flour
- 2 cups sugar
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 4 eggs
- 1 1/2 cups oil
- 1 1/4 tsp. vanilla
- 1 (8 oz) can crushed pineapple with juice
- 3/4 cup chopped pecans
- 3 1/2 cups powdered sugar
- 1 (8 oz) pkg cream cheese
- 1/2 cup butter, softened
- 1 1/4 tsp. vanilla
- 1 cup chopped pecans

Preparation
Step 1
Preheat oven to 350
Grease and flour 13x9 inch pan.
In a large bowl, combine carrots, flour, sugar, baking powder, salt and cinnamon. Stir in eggs, oil, 1 1/4 tsp. vanilla, pineapple and 3/4 cup pecans. Spoon batter into pan.
Bake for 30 to 40 minutes. Allow to cool.
To make Frosting: Combine powder sugar, cream cheese, 1/2 cup butter and 1 1/4 tsp. vanilla in a med. bowl. Beat until smooth, then stir in 1 cup chopped pecans. Spread on cooled cake.
