Baked Fish Fillets with Tomatoes

Ingredients
- 11 1/2 oz cherry tomatoes
- 1 tbsp. shredded lemon zest
- 8 cloves garlic, bruised
- 1 1/2 tbsp. salted capers, rinsed
- 1/3 cup olive oil
- four 4-oz firm whitefish fillets
- lemon juice
- sea salt and cracked black pepper

Preparation
Step 1
pre heat the oven to 350. place the tomatoes, lemon zest, garlic and capers in a baking dish. drizzle with half the olive oil and then bake for 20 mins.
add the fish fillets to the baking tray, drizzle with the remaining olive oil, and cook for a further 15-20 mins, or until golden and cooked through.
drizzle with lemon juice and sprinkle with salt and pepper.
serve with the tomatoes and a green salad.
