Shannon & Richard's Shepherd's Pie

We came back from camping to a pretty empty fridge and used leftovers & some defrosted lamb mince to make this very yummy shepherd's pie.

Ingredients

  • 5 large baking potatoes
  • 500 g lamb mince
  • 1/2 yellow or red pepper
  • 1/2 green pepper
  • 4 large carrots
  • 1 large onion
  • 250 g passata
  • 1 tbsp Marmite

Preparation

Step 1

Peel and cube potatoes. Boil until soft, then mash and set aside.

Meanwhile, cut all vegetables into small cubes. Add to a frying pan, with lamb mince and cook until brown and veggies are starting to soften. Drain any fat off mixture.Add passata and Marmite. Season with salt and pepper and simmer for 5-10 minutes or until vegetables are cooked.

Place pie mixture into a baking dish and top with potato mash. Place in a preheated 200 degree C oven and bake 15-20 minutes or until bubbling and starting to brown. Serve with side veg or salad
