Penne with Artichoke Sauce

Ingredients

  • 1 lb. wheat penne
  • 2 T. olive oil
  • 1/2 c. chopped red onion
  • 1/2 c. chopped basil
  • 28 oz. artichoke hearts, drained and quartered
  • 1 c. chopped brocolli florets
  • 1 c white wine
  • 1/2 c half and half
  • 1 t. salt
  • 1 t. pepper
  • 1/2 c. parmesan cheese

Preparation

Step 1

1. Cook pasta according to package directions.
2. Heat oil and butter in large frying pan. Add onion, basil and artichokes and cook on med. high.
3. Stir in broccoli and wine. Cook 3 minutes or until wine has evaporated.
4. Add half and half. Bring to a boil. Reduce heat and simmer for 10 minutes.
5. Combine pasta with sauce and toss with cheese. Serve immediately.
