Potato Pancakes

Especially accompanies German Style Pot Roast.

Ingredients

• 6 large potatoes
• 2 eggs
• 1 1/4 Tbsp. flour
• 1/4 tsp. baking powder
• 1 tsp. salt
• 1/2 tsp. grated onion

Preparation

Step 1

Peel potatoes, grate and drain. Remove as much water as possible. Place them in a towel to aborb moisture will help. Stir in the eggs. Mix together flour, baking powder and salt and add. Stir in the grated onion . Saute in shallow fat until brown on one side. Turn and brown other side. Can also be served with apple sauce. 10-12 pancakes.
