BLACK BEAN AND SALSA BURGERS

Ingredients

  • 1 Can black beans, Rinsed
  • 1/3 cup red onion, chopped fine
  • 3 cloves garlic, mashed
  • 1/4 cup Panko
  • 1/2 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1/4 teaspoon salt
  • SALSA
  • 1 large beefsteak tomato, seeded and chopped
  • 1/4 cup red onion, chopped fine
  • 1 tablespoon lime juice
  • 1 teaspoon olive oil
  • 2 tablespoons cilentro
  • salt to taste

Preparation

Step 1

1. Mash together allowing some chunks 4 patties 3" wide, 1/2 inch thick. Lightly oil pan and cook for 4 minutes flip continue cooking 3 minutes.

2. For salsa, combine all and let stand for 30 minutes.

3. To serve top each pattie with some salsa and a slice of avocado.
