Ingredients

  • Olive oil

  • 3

    garlic cloves

  • cut up chicken

  • 14.5

    oz can chicken broth

  • 1/2

    tsp poultry seasoning

  • 1/2

    tsp pepper

  • 1/4

    tsp salt

  • 3/4

    cup yellow rice

  • 15

    oz can black beans, drained

  • 1

    tsp cumin

Directions

In skillet, heat oil and add the onions and cook until soft, about 5 minutes. Add the garlic and cook another few minutes. Remove onions and garlic from pan. Add a little more oil and saute chicken pieces until browned. Stir in the broth, poultry seasoning, pepper and salt. Turn heat to high and bring to a boil. Stir in rice and reserved onion and garlic. Reduce heat to low, cover and cook until rice is almost tender, about 20 minutes. Stir in the black beans and cumin. Cover and cook until heated through and rice is done, about 5-10 minutes.
