Ingredients
- 1/3 cup fresh lemon juice
- 1/4 cup soy sauce
- 1 medium clove garlic, minced
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 lb boneless skinless chicken breasts

Preparation
Step 1
1) In shallow container, stir lemon, soy, garlic, salt, ginger, and pepper. Add chicken, cover, and marinade in fridge for 2-3 hrs, turning once
2) drain and discard marinade, transfer chicken to rack of shallow roasting pan coated with cooking spray
3) bake chicken for approx 1 hour at 325
4) cut into 2 oz slices before serving
