Ingredients
- 1 pkg. lemon gelatin
- 2 c. boiling water
- 2 Tbsp. lemon juice
- 1/2 tsp. salt
- 1 small can shredded pineapple
- 1 tsp. sugar
- 1 pkg. cream cheese
- 1/2 c. broken nuts

Preparation
Step 1
Dissolve gelatin in boiling water. Add 1 Tbsp. lemon juice and salt and chill. Combine the pineapple, sugar and remaining 1 Tbsp. lemon juice. When gelatin is slightly thickened divide into halves. Fold pineapple into half of mixture. Turn into mold and chill until firm. Place the remaining half in cracked ice and beat until fluffy and thick like whipped cream. Fold in cheese, nuts and pour over first layer and chill until firm. Sliced apples may also be used.
