No Tomato Meat Loaf

Ingredients

  • 1 T olive oil
  • 1/2 small onion, finely chopped
  • 1 chopped garlic clove, more if desired
  • 3/4 c chopped mushrooms
  • 1/4 c fresh basil leaves, finely chopped
  • 1 lb ground beef
  • 1 large egg
  • 2 T milk
  • 4-6 T breadcrumbs
  • pepper if tolerated
  • salt to taste

Step 1

Preheat oven to 425. Heat the oil in a small pan. Saute the onion; add garlic and cook 30-40 seconds. Add mushrooms and cook until brown. Add basil. Remove from heat and let cool slightly.
Combine this mixture with remaining ingredients in a bowl. Adjust amt of breadcrumbs to reate appropriate consistency for loaf. Mold mixture into two small loaves. Place in ungreased 9x9 square pan, leving about 2 in inbetween. bake for 30 min.
May substitute 3/4 c uncooked oatmeal for breadcrumbs. (I didn't like it)
