Ingredients

  • 2 cups Apples (roughly grated)
  • 1/2 cup Unsweetened Applesauce
  • 1/2 cup Flour
  • 1 tsp Vegetable Oil
  • 2 Egg Whites
  • 1 tsp Vanilla Extract
  • 2 tsp Cinnamon
  • 1 cup Carrots (grated)
  • 2 tsp Baking Powder

Preparation

Step 1

Grate apples using a large grater or chop finely and grate carrots. Mix
applesauce, flour, cinnamon, baking powder, and vanilla extract and fold in
fruit until well mixed. Beat egg whites until they hold very soft peaks, and
fold into the other ingredients. Bake in lined muffin cups at 350F for 15-18
minutes until a tester comes out clean. Cool and serve!
