Ingredients

  • 2 T butter
  • 2 T flour
  • 4 c skim or low fat milk or 2 cans of evap milk
  • 1 c cubed cooked chicken
  • 1 15-16oz can of corn
  • 1/4 c finely chopped red bell pepper
  • 1 large potato, peeled and cubed
  • 1 t salt
  • 1/4 t pepper

Step 1

Melt butter over low to med heat in 1 qt saucepan. Whisk in flour being careful not to burn. Slowly add milk, continuing to whisk until entire mix thickens.
While still heating, add chicken, can of corn, inc liquid, pepper, cubed potato, salt, and pepper. While continuously stirring, bring mix to a simmer. Continue to stir and simmer mixture 10-12 min or until potatoes are cooked.
