Tomato Juice

This is a very basic recipe and can be adjusted however you would like. Add other vegetables, seasonings and acids.

Ingredients
- 25 lbs. Ripe Tomatoes
- 1/2 cup sugar
- 2 tsp salt
- 1/2 tsp. pepper
- 1/2 cup lemon juice

Preparation
Step 1
Chop tomatoes and place in a large stock pot along with the sugar, salt and pepper. Bring to a boil over medium high heat.
Lower the heat and simmer for 15 - 20 minutes.
Pass through a food mill and finish with the lemon juice.
