  • 2 T. olive oil
  • 1/2 T. fine diced onion
  • 1 T. fine diced tomato concasse
  • 2 T. sundried tomato finely chopped
  • 2 oz. white wine
  • 1/2 c heavy cream
  • salt and pepper to taste

Preparation

Step 1

. sweat onions, add tomatoes, cook for a minute

. deglaze with wine and reduce

. add the cream slowly while continuously moving the pan (circular motion)

. reduce until slightly thickened season and taste and adjust
