Linguine with asparagus and pine nuts

  • 12 oz linguine
  • 1/4 cup olive oil
  • 1/4 cup pine nuts
  • 4 cloves garlic, sliced
  • 2 lbs asparagus
  • 1 cup shaved parmesan

Step 1

Cook pasta according to package directions.

Heat oil in medium skillet over medium heat. Add pine nuts and garlic and cook stirring frequently until golden. 1-2 minutes.
Add asparagus and cook, tossing occasionally until tender 2-3 minutes

Add the asparagus mixture to the pasta along with 1 tsp salt and pepper. Sprinkle with Parmesan before serving.
