Ingredients

  • 16 oz elbow macaroni, cooked to aldante. cool in ice bath
  • 1/4 cup diced pepperocini
  • 3/4 cup diced roasted red peppers
  • 1/2 cup diced carrots
  • 3/4 cup diced celery
  • 3/4 cup diced red onion
  • 1/4 cup diced peppadew
  • 2 cups mayo
  • 3 TBS prepared mustard
  • 1 TBS wine vinegar
  • 1 tap salt
  • 1 TBS black pepper
  • 1 cup diced salami to pepparoni
  • 2 TBS minced garlic

Preparation

Step 1

Whisk mayo, mustard, minced garlic and vinegar.
In a large bowl combine cooked pasta with remaining ingredients.
Toss with mayo mixture. Chill till ready to serve
