Peppered Flank Steak with Onion Marmalade

Ingredients
- 1 tsp vegetable oil
- 1/3 cup sugar
- 3 cups chopped onion
- 1/4 tsp salt
- 1/4 cup orange juice
- 1 (1 1/2 lb) flank steak
- 2 tsp dijon mustard
- 1/4 tsp salt
- 5 garlic cloves, crushed
- 1-2 T Montreal steak seasoning

Preparation
Step 1
1. Coat a large skillet, heat oil and add sugar. Cook until sugar dissolves, stirring constantly. Continue cooking an additional 2 minutes stirring constantly until golden.
2. Add onion and 1/4 tsp salt. Cook 20 minutes or until golden.
3. Add orange juice and cook 5 minutes or until evaporated.
4. Remove from heat and set aside.
5. Combine mustard, 1/4 tsp salt, and garlic. Rub on both sides of steak. Pat pepper mixture onto steak. Broil or grill 5 minutes per side.
6. Serve with onion marmalade.
