Ingredients

  • 1 large clove of garlic, minced into a paste with 1/2 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon white wine vinegar
  • frehsly ground black pepper
  • 1/4 cup olive oil
  • 2 large zucchini, scrubbed and halved

Preparation

Step 1

Whisk together garlic, lemon juice, vinegar and pepper. Place zucchini cut side down in a baking dish. Pour marinade over zucchini halves and leave overnight, covered and chilled, turning several times.

Grill 5 - 6-inches above coals for 8 minutes, brushing with marinade. Turn, grill another 6-8 minutes. Slice diagonally into small pieces, if desired.
