Ingredients

  • 4

    eight-ounce tuna steaks 3/4" to 1" thick

  • Salt to taste

  • Freshly-cracked black pepper to taste

  • FOR RELISH:

  • 2

    mangos peeled, pitted, and diced into 1/4" cubes

  • (pears may be substituted)

  • 1/2

    red bell pepper cored, seeded

  • and diced into 1/4" cubes

  • 1/2

    cup orange juice

  • Juice of 2 limes - (abt 4 tbspns)

  • 1/4

    cup chopped fresh basil

  • Salt to taste

  • Freshly-cracked black pepper to taste

Directions

Mix together all relish ingredients and set aside. Rinse tuna under cold water, pat dry, salt and pepper to taste and brush lightly with vegetable oil. Over a medium hot fire, grill tuna 3 to 6 minutes per side, turning once, until just opaque throughout. Remove tuna from grill and serve each portion accompanied by several tablespoons of the relish. This recipe yields 4 servings.
