Honey Barbecue Pork Ribs

This glaze is ridiculously simple and splendidly delicious. When a friend of Beth's had to make a slow cooker pot of ribs for a local wine bar's appetizer hour, this is what she made. Do provide lots of napkins along with the drinks

COOKER: Large round or oval
SETTING AND COOK TIME: LOW for 8 to 9 hours

Ingredients

  • 8 pounds pork spareribs or baby back ribs, cut into serving pieces of 3 to 4 ribs.
  • or country-style ribs
  • 2 yellow onions. sliced
  • 1 quart barbecue sauce of your choice. store-bought or homemade (page 110)
  • 1 cup mild-flavored honey

Step 1

1. Arrange the rib portions in the slow cooker, layering them with the onion slices. Combine the barbecue sauce and honey in a large bowl and mix until smooth, spoon over the ribs. If you have a round cooker, stack the ribs with sauce in between the layers. Coverand cook on LOW for 8 to 9 hours, until the meat is tender, and starts to separate from the bone.
2. Transfer the ribs to a platter and serve immediately. If there is extra sauce on the bottom of the cooker, pour it into a bowl and serve on the side.
