Ingredients
- Icing:
- 3 c. grated carrots
- 2 c. flour
- 2 c. sugar
- 2 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 4 eggs
- 1 1/2 c. oil
- 1 1/4 tsp. vanilla
- 1 (8 oz.) can crushed pineapple with juice
- 3/4 c. coconut
- 3/4 c. chopped pecans
- 3 1/2 c. powdered sugar
- 1/2 c. butter, softened
- 1 (8 oz.) pkg. cream cheese, softened
- 1 1/4 tsp. vanilla

Step 1
Heat oven to 350°. Grease & flour cake pans. Combine all ingredients for cake. Divide batter evenly between pans. Bake at 350° for 30-40 minutes or until tests done. Cool. Frosting: Combine all ingredients until smooth. Spread on cake.
