Ingredients

  • Cake:
  • 2 eggs
  • 1 1/8 cup sugar
  • 1/3 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 cups shredded carrots
  • 1/2 cup crushed pineapple
  • 1 1/2 cup all purpose flour
  • 1 1/4 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 cup chopped walnuts
  • 1/2 tsp salt
  • 1 tsp vanilla
  • Frosting:
  • 2 oz white chocolate
  • 8 oz cream cheese
  • 1/2 cup unsalted butter
  • 1/2 tsp orange extract
  • 4 cups powdered sugar
  • 2 TBS heavy cream
  • 1 tsp vanilla

Preparation

Step 1

Preheat oven 350 degrees

1. Melt white chocolate over low heat and cool to room temperature
2. Beat cream cheese and butter
3. Add white chocolate
4. Add vanilla and orange extract
5. Beat powdered sugar til fluffy
6. Mix heavy cream

Cake:
1. In a bowl beat eggs, white sugar, brown sugar, oil, and vanilla
2. Add carrots and pineapple.
3. In another bowl mix flour, baking soda, salt, cinnamon, nutmeg, and ginger.
4. Mix flour and carrot mixture.
5. Add walnuts
6. Bake 25 minutes
