Pear, Apple and Pecan Salad

Ingredients
- Dressing:
- 2 apples such as Gala or Honeycrisp
- 2 red pears, hard but sweet
- 1/2 cup pecans or walnuts, toasted and coarsely chopped
- blue cheese crumbles
- mixed greens
- 2 1/2 tablespoons orange juice (I usually buy a couple oranges and juice them.)
- 2 tablespoons unseasoned rice vinegar (If you like a stronger taste, use a white or red vinegar.)
- 2 tablespoons extra-virgin olive oil
- salt and pepper to taste

Preparation
Step 1
In a large bowl, whisk together the vinegar, oil, and orange juice.
Core and cube apples and pears. Add dressing to the apples and pears and toss well. Set in the refrigerator for least one hour. I usually make it in the morning and leave it in the refrigerator all day. MAKE ANOTHER BATCH OF DRESSING. YOU WILL PROBABLY NEED IT.
When ready to serve, put the salad greens in a bowl. Drain the excess dressing from the apples and pears on the greens and toss. Place greens on salad plates, add apples and pears on top. Sprinkle toasted pecans and blue cheese on top.
