Black-eyed Pea's Baked Squash

Ingredients
- 5 med-size Yellow Squash
- 2 eggs ,beaten
- 1 cup bread crumbs,Plus additional for topping
- 1 Stick Butter
- 1/4 cup Sugar
- 2 Tbps onion, chopped
- dash Black Pepper

Preparation
Step 1
Cut tips of squash and cut each squash into 3-4 pieces.Place squash into large saucepan an cover with water. cook until tender.drain into colander.Mash and combine with beaten eggs,onion,salt and pepper. Turn into 3 qt. casserole that has been lightly sprayed with nonstick spray. Top with bread crumbs. Bake 350-20 to25 minutes.
