Roasted Rock Cornish Game Hens

  • 1 Cornish game hen
  • juice of 1/2 lemon
  • 1/4 cup olive oil
  • 1 large garlic clove pressed
  • 3/4 teaspoon dried thyme
  • 1 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • 1/2 teaspoon crushed red pepper - (to 1 tspn)
  • Salt to taste
  • Freshly-ground black pepper to taste
  • Melted butter as needed

Step 1

Split the hens and remove the ribs and backbone. Combine all above except butter and marinate the hens for 2 to 6 hours. Bring them to room temperature before cooking.

Preheat oven to 500 degrees. Remove the hens from the marinade and pat more or less dry. Arrange in an oven dish (single layer), brush with butter, salt, and pepper and bake for 20 to 25 minutes brushing with butter once or twice.
