CAJUN SHRIMP PASTA

Ingredients
- 1 stick butter (divided)
- 1/4 medium onion
- 1 can mushrooms
- 1 small bunch asparagus (cut into 1 inch pieces)
- 1 can mild diced tomatoes and green chilies
- 1 pound medium size shrimp (peeled and deveined)
- 1 cup half-and-half
- 1 pound spaghetti
- parmesan cheese (to garnish)
- salt, pepper & Creole seasoning to taste

Preparation
Step 1
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions. Drain and set aside.
In a large sauté pan, melt half a stick of butter and add a drizzle of olive oil. Sauté the onions, mushrooms, and asparagus for 3-5 minutes or until the onions are translucent. Add the can of diced tomatoes and let simmer.
Next add the shrimp and half-and-half. Season with salt, pepper, and Creole seasoning. Cover with a lid and cook for 3-5 minutes, until the shrimp is cooked through.
Add the cooked spaghetti and toss to dress. Serve with freshly grated Parmesan.
