Ingredients

  • 3 sweet potatoes
  • 3 red onions
  • 2 cups apple cider
  • 2 T brown sugar
  • salt & pepper to taste
  • fresh and/or dried thyme

Preparation

Step 1

Preheat oven to 350 degrees

Peel vegetables and slice into paper thin rounds. Mix cider, brown sugar and salt and pepper. Heat, stirring to dissolve sugare. Put vegetables in a gratin baking dish in layers. Pour cider over the pan and scatter with fresh thyme.

Bake covered for 1 hour. Remove cover and bake an additional 30 minutes or until brown, basting if desired with pan juices.
