Scrod with Onions and Tabasco

  • vegetable cooking spray
  • 1 very large onion chopped
  • 1 tablespoon soy sauce divided
  • Tabasco sauce to taste
  • 2 tablespoons water
  • 1 pound scrod filets

Step 1

Lightly coat a large skillet with spray. Place over medium-high heat and add onion, half of the soy sauce and a little Tabasco. Cover and cook 2 minutes, stir. Add water and scrod. Sprinkle with remaining soy sauce, and more a couple more dashes of Tabasco. Cover and simmer, occasionally spooning onion mixture over filets, until fish flakes easily, about 5 minutes.
