Pasta with Broccoli and Ricotta

Ingredients

  • salt and pepper
  • 1 bag frozen broccoli
  • 1 pound medium shells
  • 1 1/2 cups ricotta
  • 1/2 cup grated Parmesan
  • 2 tsp. grated lemon zest
  • 1 tsp. fresh thyme, finely chopped
  • 2 tbsp. olive oil
  • 4 cloves garlic, minced

Preparation

Step 1

1. Bring a large pot of salted water to a boil. Add broccoli and cook for 2 minutes. With a slotted spoon transfer to a bowl. Add pasta to water and cook.
2. While pasta is cooking, combine ricotta, Parmesan, lemon zest,and thyme in a medium bowl. Warm oil in a skillet. Add garlic and saute for a minute. Stir in broccoli and season with salt and pepper, and cook stirring occasionally for about a minute.
3. Drain pasta reserving 1/2 a cup cooking water. Return to pot and stir in broccoli and ricotta mixture. Add cooking water to moisten as necessary. Season with salt and pepper. Serve.
