Lazy Day Cabbage Rolls
Donn got this recipe from one of his co-workers at ACE Hardware. It can be made in the oven or the Crock Pot. I also precook the rice. Leaving it uncooked, it just doesn't cook right. I have not tried instant rice just because I use the rice cooker to cook up extra rice and I like having extra cooked rice in the fridge. About a cup of cooked rice is perfect.
Ingredients
- 1 lb ground beef
- 1 small onion, chopped
- 1 can tomato soup
- 1 can water
- 3 T uncooked rice
- 1/4 cup brown sugar
- 2 cups coarsely chopped cabbage

Preparation
Step 1
Brown ground beef and onions in a nonstick skillet, drain. In a small mixing bowl combine tomato soup, water, rice and sugar. Pour over browned ground beef. Simmer 10 minutes, stirring occasionally. While meat is simmering, butter a 2 quart casserole dish. Fill with coarsely chopped cabbage. Pour the meat mixture over the cabbage. DO NOT STIR. Cover, and bake at 350 degrees for 1 ½ hours. Stir and serve.
EXCELLENT Crock Pot meal!!!
If the Crock Pot is used, skip the 10 minute simmer step. Cook for 6-8 hours on low setting, stir and serve.
1 package of pre-shredded cabbage works very well in this, and cuts down on prep time.
