Fabulous Strawberry Shortcake
This lighter and fluffier version of shortcake is so yummy! My husband doesn't prefer a biscuit base for his Strawberry Shortcake. He prefers a sponge cake. Well, there is no way we are doing the store bought version. This is a wonderful base that we both love. He is so happy when I make it!
Ingredients
- 1 cup flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup sugar plus two tablespoons
- 2 teaspoons vanilla
- 3/4 cup butter, softened
- 1 egg
- 1/2 cup milk
- 1 quart strawberries, green tops removed, sliced and sweetened
- Whipped topping

Step 1
Preheat oven to 350 degrees.
Spray with cooking spray or butter an 8x8 baking dish.
In medium sized bowl, mix together flour, salt, baking powder. In a separate bowl, beat egg and 1/3 cup sugar. Beat on medium high speed about 2 minutes until light and fluffy. Add the butter and vanilla and mix on medium high speed another 4-5 minutes. On low speed, add half of the flour mixture and half the milk. Then add the rest until incorporated. Do not beat more than is needed.
Spread evenly into baking dish.
Sprinkle top with 2 teaspoons sugar. Bake for 25 to 30 minutes until golden brown.
Set aside to cool.
Cut and serve, topping each piece with strawberries and whipped topping.
