Ingredients
- 2 zucchini
- salt and pepper
- 4 scallions, minced
- 1/4 cup parsley, chopped
- 1/4 cup dill, chopped
- 1 egg, beaten
- 3/4 cup parmesan, rated
- 1/4 cup flour
- olive oil, for frying.

Preparation
Step 1
Grate zucchini into a colander, toss with 2 tsp salt and let sit 10 minutes. Squeeze out the liquid. Mix with minced scallions, parsley, dill, beaten egg, parmesan and flour. Drop spoonfulls into hot oil and fry 3-4 minutes per side, flattening with a spatula.
Drain on paper towels, and season with salt.
