Ingredients
- 18 small new potaotes
- 3 tablespoons butter> can make up to 2 days in advance..reheat in warm oven
- Salt and Pepper
- 1 1/2 cups Creme Fraiche
- Trader Joe's BelleWeather Farms
- 2 oz. Caviar Osetra Whitefish roe
- 2 Tablespoons minced Chives.
- add Caviar at last moment.

Preparation
Step 1
1. Clean potaotes well and place in a large pot with cold salted water on high heat. Bring potatoes to a boil, and turn heat to a simmer. Cool till potaotes are JUST tender, about 10-15 minutes,depending on size. Drain and let cool in a colander to steamn off any moisture.
2 Cut potatoes in half and take a small slice at each end of the potatoes to allow them to sit on a plate without wobbling. With a small spoon or melon baller, take a small scoop out of the potato to hold the filling.
3 Brush the potato halves very gently with the melted butter and add a little salt and fresh ground pepper.
4 Arrange potatoes on a serving platter and put a small spoon of creme fraiche in the hole. Top with the caviar and sprinkle with chives. Serve while still warm.
MAKE AHEAD TIP: Prepare the potatoes through Step 3, arrange on a platter, cover and refrigerate until ready to serve. Allow to come to room temp. or warm slightly in the oven.
Variations:
Can take the potato pieces that were scooped out, mash with varied ingredients and restuff the potatoes, Chopped bacon, cheese Creme fraiche, chives are great accompaniments.
