Ingredients
- 1 cup quinoa, uncooked
- 1.5 cups water
- 1 cup vegetable broth
- 1/2 onion, diced
- 3 cloves garlic, minced
- 1/2 cup nutritional yeast
- 1 can chickpeas, drained and rinsed
- 5-6 cups fresh spinach
- 2 tbsp. olive oil, divided
- salt, pepper, basil, garlic, and oregano to taste
- paprika, for garnishing (chili powder if you want some heat)

Preparation
Step 1
1. Sautee onion and garlic in 1 tbsp. of the olive oil in a medium sized saucepan.
2. Add uncooked quinoa, water and broth.
3. Bring to a boil, cover and simmer for 15-20 minutes
4. Add your nutritional yeast and chickpeas and cook for 5 more minutes.
5. Season to taste.
6. Serve over slightly wilted spinach (sauteed with the other tbsp. of oil.
7. Garnish with paprika or chili powder
