Three Peppercorn Vinegar

An unusual vinegar. The peppercorns don't make it hot but add a nice kick. It's excellent as part of the dressing for a potato salad

Ingredients
- 1 tsp. black peppercorns
- 1 tsp. white peppercorns
- 1 tsp. green peppercorns
- 2 c. white wine vinegar

Step 1
Bring the vinegar to a boil in a non-reactive pan.
Remove from the heat and add the black and white peppercorns.
Let stand until cool, pour into to bottles and add the green peppercorns.
Store for 2 to 3 weeks before using. There's no need to strain this vinegar since the peppercorns won't fall apart in the vinegar
