Ingredients

  • 8 oz bowtie pasta
  • 1 onion, chopped
  • 10 tbsp sun dried tomato vinaigrette dressing
  • 1 1/4 lbs fresh or frozen large shrimp
  • 1/3 c. drained, oil-packed sundried tomatoes,
  • cut into strips
  • 1/3 c. drained pitted kalamata olives, halved

Preparation

Step 1

Cook pasta, drain, reserving 1/4 c. water. Heat skillet, add onion & 2 tbsp dressing, cook stirring until softened and golden, 10 minutes. Add shrimp and 2 tbsp dressing, cook, stirring until opaque, 4-5 minutes. Add pasta, tomatoes, olives, reserved pasta water and remaining
6 tbsp dressing. Cook, stirring until heated through, about 1 minute.
