  • 2 cans wild caught salmon, drained
  • 1 batch Lemon Ginger Avo Mayo {recipe: http://www.keyingredient.com/recipes/2301555032/lemon-ginger-avo-mayo/}
  • optional: 1/2 tsp organic turmeric
  • 2 stalks organic celery, diced
  • 1 organic apple, cored and chopped
  • 2 organic green onions, chopped
  • 4-6 handfuls organic spring mix, washed and spun dry
  • Organic extra virgin olive oil, to dress spring mix
  • optional: 1 organic English cucumber, peeled and chopped
  • optional garnish: organic lemon zest

Step 1

In a large bowl, gently fold together the salmon and Lemon Ginger Avo Mayo with optional turmeric. Add in diced celery, chopped apple, and chopped green onions.
Divide spring mix evenly among plates and drizzle with olive oil.
Scoop the prepared Salmon Apple Salad on top of the spring mix and serve with optional chopped cucumber.
Garnish with optional lemon zest.
