Pork Chops with Creamy Mushroom Sauce

Ingredients

  • 1 tbs olive oil
  • 6 1 in thick bone in pork loin chops
  • Salt and freshly ground pepper
  • 1 onion, sliced
  • 1 lb mushrooms, sliced
  • 1 tsp dried thyme
  • 1 1/2 cups beef stock
  • 1/2 to 1 cup heavy cream
  • 1/4 cup chopped parsley

Preparation

Step 1

1. Preheat the pressure cooker using the brown setting.

2. Season the pork chops with salt and pepper. Add to the oil in the cooker and brown the pork chops on both sides. Remove the browned chops and set aside.

3. Add the onions, mushrooms and thyme to the cooker and cook for a minute or two. Return the chops to the cooker, nestling into mushrooms. Pour in the beef stock.

4. Lock lid in place and cook on high for 6 minutes

5. Let the pressure drop naturally and carefully remove lid.

6. Transfer the chops to a resting place and loosely cover with foil. Bring the sauce to a boil using the browning setting. Let sauce simmer for 5 minutes, then pour in the cream. Stir in the parsley and season to taste with salt and pepper. Spoon the mushroom sauce over the pork chops to serve.
