Ingredients

  • 2 Tbsp olive oil
  • 1 red bell pepper, sliced into 1/2-inch-wide-strips
  • 1 yellow bell pepper, sliced into 1/2-inch-wide-strips
  • 6 medium red potatoes (2 pounds), cut into 1/2-inch diced
  • 1 (16 oz) package smoked kielbasa sausage, diced

Step 1

1. Heat oil in a large, heavy pot or deep large skillet with a lid over medium heat, then add red and yellow bell peppers and potatoes, stirring to coat with oil. Stir in kielbasa and cook, covered, stirring occasionally, until potatoes are tender, 25 to 30 minutes.
