Cauliflower Gratin

Ingredients
- 1 cup panko bread crumbs
- 1 tbsp olive oil
- 1 1/4 cauliflower florets, cut in 1 inch pieces (2 lb. head)
- 1/4 cup water
- 1 5.2oz pkg Boursin garlic and fine herb cheese
- 1/2 cup heavy cream
- 1/2 tsp salt
- 1/4 tsp pepper

Step 1
1. Place oven rack in middle of oven, set to 450 degrees.
2. Toss panko with oil and spread onto rimmed baking sheet. Bake, stirring often, until golden, about 2 minutes
3. Cook cauliflower through completely (the cauliflower will not cook while baking, so make sure it is cooked thoroughly, I steam mine)
4. In a bowl, add Boursin, cream, salt and pepper. Microwave uncovered, until cheese is melted, about 1 minute. Whisk mixture until smooth, then add cauliflower and toss to coat.
5. Transfer mixture to a 2 quart gratin dish and sprinkle with toasted crumbs. Bake until hot and bubbly around edges, about 7 minutes. Let cool slightly before serving.
