Pasta with Prosciutto and Asparagus

Discovered this recipe at the Farmers Market in Yuma when I purchased roasted garlic linguine.

Ingredients
- 1 lb pasta
- 1 1/2 lbs asparagus, cut diagonally
- 1 TB olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tsp balsamic vinegar
- 2 oz prosciutto, chopped
- 1/2 tsp red pepper flakes
- 1 tsp salt
- 1/2 cup freshly grated Parmesan cheese

Preparation
Step 1
Boil 6-8 quarts of water (same pot/water as you will cook the pasta in) and add asparagus. Cook 5 minutes. Drain (or remove carefully from water with slotted spoon) and put in ice water to stop cooking.
Boil water again (if necessary), add salt and pasta. Cook as package directs. Drain, but reserve 1/2 cup water.
Meanwhile in a large skillet heat oil and add onion and garlic; cook 3 minutes. Add prosciutto and vinegar, cook 1 minute. Add asparagus, pasta, reserved water, red pepper flakes and salt. Serve with freshly grated Parmesan.
