Ingredients

  • Crust:
  • 1 1/2 cup flour
  • 1/2 t. salt
  • 1/2 cup shortening
  • 3 Tablespoons cold water
  • Filling:
  • 2 cups sugar
  • 1 Tablespoon flour
  • 1 Tablespoon cornmeal
  • 4 eggs
  • 1/4 cup butter, melted
  • 1/4 cup milk
  • 1/4 cup lemon juice

Step 1

Put sugar, flour, cornmeal in a bowl. Toss lightly with a fork then add eggs, butter, milk and lemon juice. Beat until smooth and thoroughly blended. Pour into pie shell. Bake at 375 degrees for 35-45 minutes or until golden brown.

Hint: May want to cover crust edges with foil for first part of baking.
