*Pumpkin Bread

Ingredients
- 1 cup almond flour
- 1/4-cup coconut flour
- 1/2-teaspoon baking soda
- 1 Tablespoon cinnamon
- 1/2-teaspoon pumpkin pie spice
- 3 eggs
- 1 1/2 teaspoons vanilla
- 3 packets stevia (can reduce the stevia to 2 packets and add 2 tablespoons honey or pure maple syrup.)
- 1/2 cup pumpkin purée
- Coconut oil pr butter for oiling loaf pan

Preparation
Step 1
Preheat oven to 325.
Oil a small loaf pan.
Mix all dry ingredients together in a medium bowl.
In a separate bowl, beat eggs. Add vanilla and pumpkin and mix well.
Add egg-pumpkin mixture to dry ingredients and stir to combine well.
Pour into prepared loaf pan and bake for 30-35 minutes, or until tester comes out clean.
Allow to cool in pan for 10 minutes.
Then invert onto a cooling rack and cool completely before cutting.
