  • 1 pound shrimp boiled, peeled, and chopped fine
  • 1/4 cup mayonnaise
  • 1 packet sugar substitute
  • 1/8 teaspoon celery seed
  • 1/8 teaspoon salt
  • 1 tablespoon chopped chives
  • 1 dozen small eggs hard-boiled, peeled

Step 1

In a medium bowl, mix shrimp, mayonnaise, sugar substitute, celery seed, salt and chives.

Halve eggs lengthwise; scoop out yolks (save for another use, such as a topping for salads). Fill whites with shrimp mixture. Refrigerate before serving.
